I've done both. Raw they are very much like a creamy mix between a banana and a mango.
Cooked-- I've used them in "banana bread"-- only instead of bananas, I use pawpaws. In the bread, I can't tell the difference between pawpaw and bananas. The breads taste identical to me.
Unfortunately, pawpaws have a very short shelf live and don't travel that well. As a result, George Washington's favorite dessert was never cultivated.
