So this ID was a good learning experience for me. The large green appearance and butt spike pointed to Sphinxes. After pouring through images of Sphinx caterpillars I found one that looked almost identical, the Wild Cherry Sphinx due to the Pink and white stripes across the body. However, as many users have pointed out a very similar looking caterpillar would make much more sense for the area, the Apple Sphinx.
