This water plant is most definitely in the Genus Sagittaria. At different points it grew rather thickly in the acequia. Two different species of Sagittaria have been identified to date on iNat for Bexar County, Texas. These include: 1) Delta Arrowhead (Sagittaria platyphylla) and 2) Broadleaf Arrowhead (Sagittaria latifolia). Based on the characteristics evident in the images presented, the species observed is most likely Delta Arrowhead. See: https://www.inaturalist.org/observations?place_id=2685&taxon_id=48071
